Hello, friends!

Let’s talk fitness.

As you know, my last two weeks have NOT been fitness focused.  The first week I was finding myself guilty of over-training and really craving some rest for my body.  Last week, I was still getting settled from the move, starting my new job, and finalizing crazy amounts of scheduling details for the Y.

This week, I’m hoping to be back into a normal schedule and have some kick-ass workouts.

Weekly Workouts

Last Week’s Workouts

  • Sunday:  Off
  • Monday:  Off
  • Tuesday:  Two A Day!  Took Liz’s Kickboxing, then taught my Circuit class with one of the 3-2-1 Circuit Training workouts from Best Body Bootcamp.  We finished class with the BBB core work.
  • Wednesday:  The 45 Minute Elliptical Triple Mountain Workout (a cardio workout I came up with from BBB) + BBB core work afterwards.
  • Thursday:  Taught my Circuit class through a face/eye injury using the other 3-2-1 Circuit Training workout from Best Body Bootcamp.  I really enjoyed those!
  • Friday:  Off
  • Saturday:  Off

Oh wait, you want me to explain the face/eye injury?

It was 5:40am on Thursday morning, and I was loading my car for the day.  Loading my car on Thursdays automatically includes:  Purse, Gym bag including shower stuff from my morning workout + change of work clothes for the day, Lunch bag, Work bag with my laptop, and anything “extra” which on Thursday included a bunch of returns I was doing after work.  After I finished tossing all these things into my car, I was standing back up on the driver’s side when the car door itself decided to not remain open and instead start shutting itself.  In a case of really bad timing, the point of my car door sliced my face right beneath my eye as I was standing up.  Ensue: bloody cut on my face right under my left eye (thank God it didn’t hit my eye itself..?!), my left contact falling out, and immediate swelling/pain.

But I had no choice but to get in my car and continue toward the Y for 6am class.  Thankfully I had caught my contact in my hand and it popped back in with no issue.  I had no ice, and my face was REALLY hurting, so I rubbed the plum in my lunch bag all over my face on my drive in.  Makeshift ice pack, what of it?  Then I taught class with salty sweat dripping over my cut, had a personal trainer bring me antibacterial ointment and Advil which I tried applying/taking while still teaching, and my face was black and blue for my second day of work.

Huge.  Fail.

However, everyone’s suggestions on my Facebook page for what to tell people for a story *almost* made it worth it.

Reader Recipe! Jen’s Jalapeno Cheddar Turkey Burgers

Happy Monday!  Today starts the beginning of a new series on my little blog:  Reader Recipes!  I like to cook/bake, and I will post recipes that I try that I really enjoyed or that I think will interest my readers, but food and what I eat is definitely not the focal point of Fitness & Feta.  I am starting Reader Recipes to get exposed to some new recipe new ideas myself, but to also expose you guys to different types of things that I might not try myself.  My first reader recipe is a great example of this, as I have zero tolerance for spicy foods.  Warm welcome to Jen and her Jalapeno Cheddar Turkey Burgers!  Thank you Jen, for sharing your recipe and being my first Reader Recipe guest post!

Reader Recipe of the Month:  Jen’s Jalapeno Turkey Burgers

Hi there, Fitness & Feta readers, it’s Jen over at nutcaseinpoint.

Before I get to this awesome recipe I tried last week, I wanted to throw out a few snippets of advice.

  1.  Sunglasses work as deterrents from onion eyes.
  2. Don’t pick your nose after dealing with chili powder.
  3. Make sure there is always alcohol in the fridge. It helps with sanity.

Ok, onto the recipe.

You know when you have to plan dinner and you’re all “oh man, what the hell am I gonna make?” and you ask your man SO what you should have and he/she goes “I dunno” and you’re sick of making chicken and cereal is not an option?

That’s every single weeknight in our household.

Anyways. TURKEY, people.  Ground turkey is the answer.  You can use it for anything!  Meatloaf, meatballs, burgers, chili…I can keep going.

And then you do a quick once-over in your fridge and cupboards to see what else you’ve got.  And then you go online and Google recipes that call for ingredients you already have.  And then maybe you tweak here and there.

Then you come up with this:

Jalapeno Cheddar Turkey Burgers

Here’s what you need:

  • 1.5 lbs ground turkey
  • ¼ cup jalapeño cheddar cheese
  • 2 cloves garlic (I used minced garlic)
  • 1 tbsp. chili powder
  • Salt & pepper to taste
  • ½ onion

This is what you do:

  • Dice up the onion, cheese and  garlic –  throw in a bowl.
  • Throw that stuff in a bowl; add the meat, the chili powder, and s&p.
  • Using your hands, get all the ingredients fully incorporated.
  • Form into 4 patties.
  • In a skillet (on high), add EVOO.
  • Throw the burgers on the skillet for about 6-8 minutes each side.

Optional: Throw the burger on a bun with guacamole.

Mandatory:  EAT.

And then, after said burgers are digested, you think to yourself “Whoa, I it’s dark in here (take off sunglasses) and my nose buuuuurns (stop picking it with your chili powder nails) where is the boooooze?! (in the fridge).
