The Superbowl was a week ago, but we still have leftover food in our apartment from our party.  Yes, even ham and salsa still.  Just wanted to share our Superbowl eats!

Chocolate Covered Football Strawberries
Chocolate covered strawberries are always delicious, but I tried to make them extra festive.  I’ve got a cute display going on here, but I kid you not I made it through decorating a total of the 7 you see below before a kitchen meltdown ensued.  Note to self – never put melted chocolate in the frosting gun.  Ever again.

Ham Sandwiches
Every year around the holidays, my company gives each employee a ham, turkey, Kosher turkey, or veggie lasagna – their choice!  I brought my ham to my parents to serve on Christmas Day this year, but we still had Tim’s ham in our freezer.  We decided to have little ham and cheese finger sandwiches, and I was psyched to finally have a football themed party to use our football spreaders at.  And our football tray.  When Tim cooks the ham, he whisks brown sugar, honey, and water together, brushes it on top, and then cooks at 375 degrees until the center of the ham reads 135 on the meat thermometer (about 15 minutes per pound).

Regular Salsa and Pineapple Chipotle Salsa
Both homemade!

Homemade Salsa

For the regular salsa, pulse the following ingredients in a food processor:  1 can of whole tomatoes (or about 5 plum tomatoes), 1 Italian pepper, half a chopped yellow onion, 1/4 cup of cilantro, 2 cloves of garlic, 1 tbsp of extra olive oil, 1 tbsp of rice vinegar, 1 tsp lemon juice, salt, and pepper.

For the pineapple chipotle salsa, pulse the following ingredients in a food processor:  1 can of whole tomatoes (or about 5 plum tomatoes), half a grilled pineapple, four chipotle peppers, half a chopped yellow onion, 1/4 cup of cilantro, 1 tbsp of extra olive oil, 1 tbsp of rice vinegar, 2 cloves of garlic, salt, and pepper.

For both recipes, the amounts above will yield about a jar’s worth for each.  Oh, and I used some of the tomatoes that the folks at Tuttorosso sent me to make the salsas!

White Bean Dip
The easiest recipe in the world.  Just pulse extra virgin olive oil, crushed red pepper, 2 cans of cannellini beans, parsley, 2 cloves of garlic, and some s&p.  So yummy, especially served with the whole wheat Ciabatta bread we picked up from the bakery.

I feel like we had every snack imaginable.  We had Ashley & Brett bring “dip chips” — those that could be served with our salsas and bean dip, and we had Baka bring “non dip chips.”  Have you ever heard of anyone say that before?  I couldn’t stop laughing when Tim said that!  In case you are wondering, “non dip chips” are chips (or other snacks) that you would not eat with dip.  ie Doritos, Smartfood, Sun Chips.  Don’t worry, I also provided carrots & celery!

Everyone gobbled it up so fast that I didn’t get to snap a picture.  That recipe is so good it’s deserving of its own post another time though.

…and this is why I didn’t even bother putting jeans on before people came over.  Yoga pants all the way, people… no need to V-neck!
