Weekly Eats

Last week, our meal plan didn’t go as planned because Tim we forgot to factor in that Tim’s lunches were taken care of due to customer events at work.  That meant we didn’t need to make nearly as many meals as we thought we would need, and we had a ton of leftover food from both girls night and Greek Easter the week before.

Here’s the recap!

One noteworthy breakfast:  Scrambled eggs with salsa, topped with sliced avocado.  Love. These. Flavors.

For lunch, I’ve been on a huge fruit ON salad (not the same as fruit salad) kick lately.  I am really enjoying greens topped with barley, sliced strawberries, sliced kiwi (I think the prettiest fruit, no?), blueberries, walnuts, and goat cheese.  The barley is what gives this meal it’s staying power.  I am definitely making this again this week.

For dinners, we enjoyed grilled cod with strawberry salsa on Monday night…

Then on Thursday and Friday, I had my very colorful quinoa salad while Tim ate pulled chicken sandwiches.  Like I said, lots of leftovers.

Saturday and Sunday’s dinners were both out!

From The Brickhouse Cafe included mussels for an appetizer, and the “shrimp siciliano” for a meal (shrimp sautéed with mushrooms, broccoli, roasted red peppers in bianco sauce), along with a side of rice pilaf and more veggies.  It was good, but it was a little too oily for my liking.  I would definitely order something different next time I go there.  I would go back… it was super cute inside!

From The Aegean included dolmades for an appetizer, Greek salads, and lamb kabobs for my meal with sides of rice, roasted potatoes, and green beans.

Also, one noteworthy new beer discovery:  Goose Island urban wheat ale.  Delicious.  So was the popcorn that went with it.  I literally said to Tim at the bar, “this popcorn tastes so… different… what’s on it?” to which Tim responded, “um, salt.”  Doh.   I’m so used to my unsalted with rosemary instead!

Here’s our food plan for the upcoming week:

Lunches will be the avocado egg salad that we didn’t end up making last week, more fruit/barley on salad like pictured above, and/or leftovers from the dinners we make.

Dinner plans include:

  • Monday:  Shrimp stir-fry
  • Tuesday:  Leftover shrimp stir-fry
  • Wednesday:  Chicken ravioli
  • Thursday:  Portobella pizzas (I loved this idea after reading them in Jen’s weekly eats post last week!)
  • Friday:  Steak with baked sweet potatoes
  • Saturday:  TBD!

I have recently been having a to buy organic or not to buy organic debate with myself AND I’ve been doing a lot of price comparisons between grocery stores.  This is changing up how we are grocery shopping to some extent.  I will likely be reaching out to you readers for some advice in a more detailed post coming soon!

Weekly Workouts

Good morning, everyone!  I hope you all had a lovely weekend.

Here’s a quick recap of mine:

On Friday night, Tim and I enjoyed a low-key dinner outside on our new bistro table before heading to The Gaff on Moody Street for a few beers.  On Saturday, Jen and I took an early class at The Studio Empower, and just like last time my legs were shaking throughout the entire workout.  Saturday was pretty rainy, which meant it was the perfect day to do my winter/summer clothes swap and a lot of organizing.  By the time Saturday night rolled around, I was ready to get out of the house, so Tim and I met Geoff and Trina for dinner at The Brickhouse Cafe in Dedham.  Finally, yesterday was spent celebrating Georgia on Mother’s Day – you can catch my recap post here if you missed it last night.

And now we’re underway with another week, which means it’s time for my weekly workouts post.

Last Week’s Workouts

I finally feel like I’m fully back into my workout groove.  It took a few weeks after my full rest week to be back into it physically and mentally… but I’m back in both ways and couldn’t be happier about it!

Sunday
Active rest:  30 minute walk between dinner and dessert on Easter

Monday
I was in the mood for some serious cardio time, but NOT in the mood to be on a machine forever.  I ended up throwing together a little cardio medley: 20 minutes of steady state on the elliptical > 15 minutes of sprints on the spin bike > eight minutes of jump rope Tabata > 60 seconds of burpees.  Finished it off with some serious hip stretching and foam rolling (aka creepin’ on Monique‘s class!).  Extra on Monday included a 20 minute walking meeting + abs at lunch in the gym with Dawn.

Tuesday
Two A Day Tuesday, Cinco de Mayo style!  1 hour of Kickboxing, followed by my class that focused on balance and unilateral training.

Wednesday
Active rest: 30 minute walk at work.  We got caught in the rain!

Thursday
Taught my class with this countdown style workout:

It was a very sweaty one!

Friday
I worked from home on Friday and used my lunch break to work out.  I went for a very sweaty 2.25 mile run, then did a little circuit of upper body and ab work.  Topped this one off with lots of stretching/foam rolling as well.

This Week’s Workouts

Here’s the “plan” for this week.  I use the word plan loosely, because I don’t have a lot definitely planned out yet!

  • Sunday:  Active rest – walk around Castle Island for Mother’s Day
  • Monday:  Cardio + core work
  • Tuesday:  Two A Day for Kickboxing and then teaching my class, style TBD
  • Wednesday:  Cardio + core work
  • Thursday:  Teaching my class, style TBD
  • Friday:  Deck of cards?  We’ll see!
  • Saturday:  Probably going to take Saturday as an active rest day since I want to feel ready for the Wellness by the Water retreat on Sunday!
