Weekly Eats {Week of Salads & First Birthday Present}

Hey, hey, hey.

Last week I opened my first birthday present! It was from Dawn at work, and it was food related.  Clearly it needed to make it into my Weekly Eats post.

Organic Spanish red wine (can’t wait to drink this), organic blue agave from Trader Joe’s (can’t wait to bake with this), and Dawn’s homemade trail mix (can’t wait ate this already).  Thank you, Dawn, for my fun treats!

We nicknamed the rest of last week “The Week of Salads.”  That probably sounds super boring, but hey, not every week can be super exciting.  Plus there were a couple of new recipes in the mix.  I can’t remember the exact days of when we ate what, but here was our line up:

Whole Foods salad buckets made it into the lineup too.  Does anyone else feel like when they go to the Whole Foods salad bar they end up with the most random stuff just thrown together?  That’s why I call them buckets.

Anyways, one of the salads was from a dinner date with some of the gym gals after last week’s free CrossFit class.  The other is from when I went back on Friday before going out with my home friends.  Normally I don’t buy so much food out during the week, but unfortunately our planned chicken meal for the end of the week didn’t end up happening because our chicken went bad.  And we just didn’t feel like heading out to get more.

The chicken going bad also spurred a spontaneous dinner date at Fiorella’s on Thursday night.  Fiorella’s caprese salad, how I love you.  (Jess Dock! I always think of you when I eat this.)

I also ordered lemon chicken that night, but didn’t snap a pic.  That’s about it for noteworthy eats last week!

This week our meal plan is looking something like this:

Dinners

  • Sunday – Farro stuffed patty pan squash
  • Monday – Repeat of the grilled shrimp nicoise salad
  • Tuesday – Leftover shrimp salad
  • Wednesday – White eggplant over wheat pasta with tomato sauce
  • Thursday – Out to dinner with Slesh
  • Friday – Either quinoa or dinner somewhere before birthday outing with friends
  • Saturday – Birthday dinner with Tim

Lunches

  • Sunday – SOWA Open Market deliciousness
  • Monday – Random salad with leftover ingredients from the fridge
  • Tuesday – Leftover farro and veggies from Monday’s patty pan squash
  • Wednesday – Southwestern sweet potato salad
  • Thursday – Leftover sweet potato salad
  • Friday – have the day off, TBD
  • Saturday – birthday TBD

Two Salads and an Outdoor Workout

What’s on tap for the weekend, friends?  For me it’s a low-key night in tonight, a bridal shower and a friend’s birthday party tomorrow (busy Saturday!), and my brother’s birthday dinner on Sunday night.

I just wanted to pop in and share two things with you guys before I tackle my morning workout and my workday.

First, two salads.  I was flipping through my phone yesterday and realized that I took pictures of two different salads this week that I have yet to write about on the blog.

Second, the outdoor workout I did with my class yesterday.

Would that really be three things since it’s TWO salads?

Here goes!

Salad #1:  Grilled Turkey Tips, Avocado, and Apple Salad

Grilled turkey tips with sliced avocado, apples, tomatoes, red onions and cucumbers over a bed of lettuce.  I had this for dinner when I met up with my friend Jess at the British Beer Company in Walpole on Saturday night.  It was yummy and filling!  Catching up with Jess was fun too — she had lots of fun stories to share from her honeymoon.  We were at the BBC for about two hours when some LOUD live music came on and we could barely hear each other talking from across the table anymore.  We decided to leave and head down the street to Sky Restaurant.  We’ve both always wanted to try that place, and it seemed lounge-ish and cool.  Well, we were the ONLY people in there!  It was super weird and awkward.  The place gets rave reviews online, so maybe it’s just because the Celtics were on so everyone was at a sports bar (I almost just wrote sports bra by accident) instead?  I’m not sure if I’d go back there though based on this one experience.  Hmmm.  Either way, fun times with Jess!

Salad #2:  Southwestern Grilled Chicken Salad

Tossed greens, corn, black beans, scallions, cilantro, and grilled chicken with lemon avocado dressing.  This was my dinner on Wednesday night when I met up with Allison and Tracy for dinner at Christopher’s in Porter Square.  This one was good, but not the best salad I’ve ever had.  The dressing was a tad on the spicy side, and I found that I was already hungry by the time I got home.  I do LOVE Christopher’s though!  Great little dinner/drinks spot fo sho.

First Outdoor Class of the Season

Onto the third thing, the outdoor workout I had my 6am class do yesterday.  It’s been SO dreary in Boston this week, so of course I jumped on the chance to take our workout outside when I heard yesterday’s weather was going to be beautiful!  I think some people were a little taken aback by this, but everyone usually is when I introduce something new and then they end up loving it later.

We did this on the basketball court!

Note — the cardio pieces were all done immediately after each class member completed the previous combination.  Some people obviously then did the cardio for longer than others.  No matter what, we all did the cardio together for at least 10 seconds before moving into the next prescribed combo.

I loved being outside!  There’s something about it, especially at 6:00am, that sets such a good tone for the rest of the day.  I hope everyone else liked it too!  I know Jen did, at least 🙂

Off to the gym for a workout with Tim!  Upper body focus today because my legs are on FIRE after all my workouts this week.  Enjoy the day 🙂
