Gasp! Healthy Burger & Fries!?

Who knew there was such thing!?

Tim and I really enjoyed these.  Yes, this was our homemade Valentine’s Day dinner.  Burger and fries!  Woohoo!

Beef & Bean Burger Wrap

Makes 4 servings, recipe inspired by EatingWell

Ingredients

  • 12 ounces 93%-lean ground beef ground turkey —> We decided to use turkey instead of beef for a leaner meat
  • 1 cup refried beans black beans —> We used black beans instead of refried to make it a little healthier
  • 1/2 cup chopped fresh cilantro
  • 1 tablespoon chopped pickled jalapenos —> No spicy food for me, please!
  • 1 avocado, peeled and pitted
  • 1/2 cup prepared salsa
  • 1/8 teaspoon garlic powder
  • 4 whole-wheat tortillas, warmed
  • 2 cups shredded romaine lettuce
  • 1/2 cup shredded pepper Jack cheese
  • 1 lime, cut into 4 wedges —> Unnecessary!

Directions

1.  Position oven rack in upper third of oven; preheat broiler.  Coat a broiler pan with cooking spray.

2.  Gently combine ground beef turkey, beans, and cilantro and jalapenos in a medium bowl (do not overmix).


3.  Shape into four 5-by-2-inch oblong patties, and place on the prepared pan.


4.  Broil the patties until an instant-read thermometer inserted into the center reads 165°F, 12 to 14 minutes.

5.  Meanwhile, mash together avocado, salsa and garlic powder in a small bowl.


6.  Place tortillas on a clean work surface.  Spread each with the guacamole, then sprinkle with lettuce and cheese.  Top each with a burger and roll into a wrap.

7.  Serve immediately, with lime wedges.

Sweet Potato “Fries”

“Fries” because they’re baked instead of fried!

Ingredients

  • 2 sweet potatoes, peeled and cut into “wedges”
  • Extra virgin olive oil
  • Ground black pepper
  • Celery salt
  • Ground bay leaves

Directions

  1. Preheat oven to 450°F.
  2. Toss sweet potato wedges with oil and spices.
  3. Spread the wedges out on a rimmed baking sheet.
  4. Bake until browned and tender, turning once, about 20 minutes total.

You know what?  I would have this meal all the time over a regular ole burger and fries.  Call me crazy, but these had a ton of flavor and I felt better about myself knowing they aren’t bad for you!  If you are particular about the taste of turkey instead of beef, the cilantro and black beans kind of masked the fact that these were turkey burgers instead.  Give this meal a try, I promise it will not disappoint.  Plus, it was nice to have this for a leftover dinner the following night!
